Harvest, vinification and aging
Harvest: Picked by hand in October
Pre-Cold maceration: 7 – 8 days at 5 ºC
Fermentation: Alcoholic fermentation in stainless steel tanks with autochthonous yeast and subsequent malolactic fermentation in French oak barrels.
Pre-Fermentation maceration: 15 days at 25 ºC
Fermentation temperature: 24 -26 ºC
Aging: 15 months in new french oak barrels
Bottle aging: Minimum 1 year
Vinification: Due to the elaboration process, light filtering, this wine can present some precipitation in the bottle. Clarifiers are from a vegetable origin, which makes it suitable for vegan consumers.
