Location: Finca las Blancas

Altitude: 557m

Type of Soil: Silty – clay soil rich in organic matter

 

Crop density : 2500 plants/Ha

Vineyard : 20 years

Vine training systems: Wire – trained vines

Environment: Continental climate softened by the Mediterranean influence, with an average annual temperature of 15 degrees and a Mediterranean type rainfall regime.

Grape varieties:  Sauvignon Blanc, Verdejo

Vintage: 2022

Harvest, vinification and aging 

Harvest: Picked by hand and mechanical between mid-August and mid -September

Pre-Fermentative operations: In order to avoid oxidation, a direct pressing is carried out with cold racking.

Fermentation: The varieties are fermented separately in new french oak barrels of 500 liters. Malolactic fermentation is done in the same barrel. 

Post-Fermentative operations: Aging on its lees for 5 months in barrel

Fermentation temperature: 15 – 18 ºC

Vinification: Clarifiers are from a vegetable origin, which makes it suitable for vegan consumers.  

Limited production to 2.000 bottles

Alcohol: 12,00 % By vol

Acidity: 5,5 g/l

Residual Sugar: 0 g/l

Volatile acidity: 0,4 g/l

The color is pale yellow with golden iridescence. With an intense nose, ripe aromas and spicy touches predominate. In the mouth we find a balance between spicy and tropical , with a a long and fresh finish. 

In the Table:

The temperature of conservation of this wine should be around 15 ºC, it is important for it to be constant, avoiding thermal jumps. It must be protected from light sources. 

The special smooth texture and oxidized character make this wine ideal to serve with duck, beef and mature and hard cheeses..
