Harvest, vinification and aging
Harvest: Picked by hand in October
Pre-Cold maceration: 7 – 8 days at 5 ºC
Fermented with native yeasts in 750-litre stainless steel tanks, each variety separately, at a fermentation temperature of 25ºC. Light pumping over from the second half of fermentation. Maceration time is 12 days. Light pressing, after which we remove the coarsest lees and transfer the wine to new 500-litre French oak barrels for 16 months. Lees work during ageing.
Post-fermentation maceration: 15 days at 25 ºC
Bottle ageing: After alcoholic fermentation, it spends sixteen-months in 500-litre French oak barrels, where we stir the lees and carry out malolactic fermentation. The barrels that do not meet the profile are then discarded, and the rest are blended together, with 5, 4, 3 or 2 barrels being used depending on the vintage. In this case, there were three: Forcallat, Bonicaire and Malbec.
Pre-Fermentation maceration: 15 days at 25 ºC
Fermentation temperature: 24 -26 ºC
Aging: 16 months in new french oak barrels
Bottle aging: Minimum 1 year
Vinification: Due to the elaboration process, light filtering, this wine can present some precipitation in the bottle. Clarifiers are from a vegetable origin, which makes it suitable for vegan consumers.

Rich, deep nose with glossy ripe cherries, blackberries, chocolate and walnuts. Pretty full-bodied and
flavorful, with creamy tannins and a concentrated, lengthy finish.

The temperature of conservation of this wine should be around 15 ºC, it is important for it to be constant, avoiding thermal jumps. It must be protected from light sources.
Ideal to acoompany game meat and flowl, stews or casseroles, red meat and mature and hard cheeses.
