Harvest: Picked by hand in October
Pre-Cold maceration: 7 – 8 days at 5 ºC
Fermentation: Alcoholic fermentation in stainless steel tanks with autochthonous yeast and subsequent malolactic fermentation in French oak barrels.
Pre-Fermentation maceration: 15 days at 25 ºC
Fermentation temperature: 24 -26 ºC
Aging: 15 months in new french oak barrels
Bottle aging: Minimum 1 year
Vinification: Due to the elaboration process, light filtering, this wine can present some precipitation in the bottle. Clarifiers are from a vegetable origin, which makes it suitable for vegan consumers.

Cherry colored with ruby iridescence. An intense and full nose, a wine with balanced aromas ranging from roasted to mature fruit. The palate is harmonious and strong with ripe tannins.
Conservation and consumption
The temperature of conservation and consumption of this wine should be around 15 ºC, it is important for it to be constant, avoiding thermal jumps. It must be protected from light sources. It is recommended to be consumed at a temperature between 18 – 20 ºC. We suggested decanting the wine and airing for one hour prior to serving to best appreciate the wine.
Ideal to acoompany game meat and flowl, stews or casseroles, red meat and mature and hard cheeses.
